This sushi is the most beautiful food it's like fine art. It's super delicious and the veggies are so fresh. What a bummer they are closing. Maybe they will make a little cookbook so we can all have the flavors live on!!!!!! HINT HINT
Vegan sushi?! Sounds like a waste of money, right? Think again, Mitate revolutionized all my concepts of sushi and was better than I could have imagined! They just announced they'll be closing at the end of April, so please go support them until then!! You won't be disappointed. The owners are so friendly making me feel so welcomed and invited. We got an order of their mountain, oasis, and spicy squash rolls and their eggplant nigiri. The flavors of each roll were so unique and different, yet they worked so well together. My favorite was the mountain roll - the truffle sauce elevated the roll all the much more. The oasis roll had a nice kick from the shishito peppers and the fried shallots were a nice added texture. The eggplant nigiri simply melted in my mouth and was sweet/savory, and had a nice zing from the citrus. Mitate brings a spin to sushi and their flavors and presentation definitely showcase their love and passion for food. Come and support this food truck before they close!!
I'd read the 5-star reviews and seen the delectable pictures, but experiencing Mitate for myself was an absolute must. Their menu is small - 3 main rolls ($13-14), 3 nigiri options ($5), and 3 simple sushis ($7-9). If you need suggestions, the friendly staff can provide a recommendation. There's no small flavor, nor lack of creativity in making everything vegan. Expect a small wait, as everything's made to order. Each ingredient here is well-prepared, serving a purpose, and paired with other flavors - no, it's not just spinach, it's almond spinach. That purée is a triple-threat of black bean, garlic, and truffle. I could go on! Suffice to say, the sushi tastes really good. The rice is well-made too. Plus, you don't need to worry about the fish being ethically sourced or properly frozen or whatever. As with most sushi, I wish my wallet and my stomach allowed me to eat more of it! By far the best vegan sushi I've ever had, and it gives normal sushi a run for its money honestly. Stop by the CORE food cart pod to try it!
I've heard so much about Mitate, it's been my goal to make a visit. I'm normally in the area during the hours they are not open. I was so happy that for once I was in the area when they were open! I have really wanted to try their sushi. Everything on their menu is vegan/gluten-free. I ordered the mountain roll and their eggplant nigiri. The mountain roll is okay. However, the eggplant nigiri, I can go on and on about it. It's so delicious. The mountain roll has almond spinach, tofu, and cucumber wrapped in soy paper, then topped with sauteed mushroom, baked kale, and a black bean garlic truffle puree. The tofu wasn't really noticeable in the roll. The black bean garlic truffle puree is what shined. For me, the truffle was a bit overpowering for the other flavors that were there. Other than that, I do love the textural contrast the baked kale gives to the roll. The eggplant nigiri was a great version of the unagi nigiri. It had all the flavors and the textures. The sauce that was spread on top of the eggplant was delicious and topped with some smoked sea salt and microgreens. I can eat so many of these. The food they make at Mitate definitely gives a great experience. I can't wait to try other rolls such as the meadow and oasis roll.
The first time I tasted Mitate plant based sushi I was blown away. Food to me is about carefully executing flavors to allow someone to experience food, not just eat. Summer and Nino aren't just a food cart owner in Portland they're an amazing couple who curated a culinary experience. Every bite of their sushi (this is at least a two bite endeavor,) is a flavor and texture explosion. Where no one flavor shines but they support and brighten one another. The flavors don't just work, they are unforgettable. And to me, who loves texture more than anything else in food, no food gave me the complete experience the way Mitate has. This was our last taste of heaven last night. I'll miss this incredible cuisine, and Summer and Nino's kindness. I know I don't speak only for myself when I say that I hope we will see you back. Because I'll be waiting.
